Which is the correct term when referring to multiple ROS maps:
"Records of Survey" or "Record of Surveys"?

"Records of Survey" implies there are multiple records (or maps)
"Record of Surveys" implies there are multiple surveys.
If you are describing an area (parcel of land) which has multiple different maps filed, you would likely use the former.
If you are describing an instance where you are referring to multiple different maps which are filed, documenting different surveys, you would likely use the latter.
I tend to just say "multiple record of survey maps" like you did in your question for simplicity.

Hmmm, so then option three what I tend to say is, I will prepare and file a Record of Survey, being one map?

Multiple maps of multiple surveys.
When referring to Attorneys General, you are referring to multiple attorneys that generally represent the government in most any matters. Thus Attorneys (of a) General (nature). Multiple attorneys of one category.
